Toasted Bread Crumbs aka Pangrattato
The key to the perfect bowl of toasted breadcrumbs is to cook the plain breadcrumbs dry in the pan for a minute or two to heat them up. This gets them ready to receive the olive oil and seasonings.
heat up the frying pan
add the breadcrumbs
toss for a minute or two
add olive oil, just a touch at a time. I prefer my pangrattata on the dry side.
toss and mix for a minute or two more
taste for crunchiness
remove from heat
grate some cheese onto them and voila!
