Toasted Bread Crumbs aka Pangrattato

The key to the perfect bowl of toasted breadcrumbs is to cook the plain breadcrumbs dry in the pan for a minute or two to heat them up. This gets them ready to receive the olive oil and seasonings.

  1. heat up the frying pan

  2. add the breadcrumbs

  3. toss for a minute or two

  4. add olive oil, just a touch at a time. I prefer my pangrattata on the dry side.

  5. toss and mix for a minute or two more

  6. taste for crunchiness

  7. remove from heat

  8. grate some cheese onto them and voila!

Here are a few ways to use pangratta (toasted breadcrumbs) to turn any dish into a rockstar.

  1. top mac and cheese

  2. top buttered noodles

  3. top grilled veg (asparagus, green beans, tomatoes)
